How to Make Cauliflower Rice with Just Two Ingredients

“Cauliflower rice?  But I eat cauliflower with rice!”

That was my reaction when I first heard of cauliflower rice. Then I dismissed the idea right then. It was a couple of months ago.  I am actually a big fan of cauliflower from when I was in grade school. My parents had a little yard where they plant a few vegetables that include cauliflower. So, I knew the look, feel and taste of this veggie. And yes, we eat them with rice after sautéing them with shrimps, usually. That particular taste I always remember and had attempted to duplicate. I say, I got to probably about 80% of what I am missing. It must be mom I am missing, and her cooking.

Cauliflower and rice or cauliflower rice?

Cauliflower and rice, one of the best food combinations in my dictionary! The reason I dismissed making rice out of cauliflower. But then…

Why not?

Since when did I say “no” to something food?

Ah I knew when, but not to rice, nor to cauliflower… and this one – cauliflower pretending to be rice. An Australian friend offered me this dish about a year ago. It was cooked in shrimp itself. She said “fried rice out of cauliflower and shrimps.” Wide eyed, and my mind trecking down memory lane to grade school, I took the dish bowl and attacked what looks to me like vegetable with shrimps! In denial? Maybe.

Hmm… nice!

But not the same.

Okay, sit beside me, mom, and let’s give this one a chance!

How to make cauliflower rice with two ingredients

I looked up for cauliflower rice recipes after I did my first. Why did I reverse it? No particular reason. Then I realized that there are a number of ways to do this dish. I have to admit that my version might be the simplest as it calls for only two ingredients – the cauliflower itself and butter.

Amazing result–that’s what I can say!  I may not be best judge as I am a cauliflower fanatic, but I can tell you that it takes the place of rice – I mean, you can have it with the regular viands you can cook.  And if you decide to go for a healthier choice while you are a rice-devotee, then this is it.

Can you guess what I did with my cauliflower rice? Hold your breath…
I served it broccoli done similar to how my mom sautéed cauliflower in grade school. And I replaced the shrimps with chicken!

Cauliflower Rice

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 5 cups/servings 1x

Ingredients

Scale
  • 3 heads of cauliflower
  • ¼ cup butter (or as you prefer)

Instructions

  1. Wash the cauliflower then dry using paper towel. Grate using the regular grater or food processor. You may want to dry the grated cauliflower a little bit more at this stage.
  2. Heat a pan or casserole and melt butter over medium heat.
  3. Add grated cauliflower and stir until well-covered by butter. Continue to stir for no more than 5 minutes.
  4. Serve as rice!

Notes

Tips:

Use the medium holes of the grater. The small holes will make the cauliflower too fine and will result in mushy rice, err, cauliflower rice.

If using food processor, grate only for no more than a couple of rounds.

Do not overcook.
