Fattoush - A Mediterranean Salad

For the salad

  • 2 heads of romaine lettuce cut up
  • 1 big tomato deseeded and diced
  • 2 medium sized cucumbers halved and sliced or diced
  • 1 medium sized carrot – halved and sliced
  • 1 medium sized green bell pepper
  • 1 medium sized red bell pepper
  • 2 pieces raddish French Breakfast or Sparkler type
  • 1 tbsp sumac
  • About a cup of pita bread croutons

For the dressing

  • ¼ cup olive oil
  • ½ cup juice of lemon
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 2 tbsp pomegranate molasses can be replaced with 1tbsp sugar


  1. Mix all salad ingredients except sumac and croutons. Set aside.
  2. Mix dressing ingredients well. Sprinkle over salad then mix till vegetables are well coated.
  3. Sprinkle with sumac and croutons.
  4. Serve and enjoy.
