I have a strong feeling that you have been looking for a coconut macaroon recipe to satisfy that distinct taste you are looking for.  And an even stronger feeling that this is not your first attempt to make coconut macaroons.  I may be wrong, but in both cases, welcome to my blog! 

Finding yours in my coconut macaroon recipe

I was, some years ago (two decades?) – looking… baking, looking… baking… until I got to the right one. That coconut macaroon recipe I called “the right one” is what I am sharing with you here.  I hope you find this satisfying. Obviously, I have more than one recipe for coconut macaroons. Yeah, a few of them I have kept and the others I returned to the rightful owner, LOL! 

However, this recipe, with a little twist from its original version, has my family and friends, wanting for more – my main motivation for sharing this recipe with you.  You just have to be part of this! 

My history with everything coconut

I grew up with the commercial taste of coconut macaroon because coconut is abundant in my country, the Philippines. In fact, the Philippines is one of the biggest producer and exporter of coconuts and coconut-by-products, which includes copra, coconut oil, desiccated coconut (there you go), to name a few. A single coconut tree has more than a hundred by-products. This goes to say that recipes with coconut, coconut milk, etc. abound, coconut macaroon being one of them in the dessert category.

Where I stay now in the Middle East, there is one recipe that is like a cousin of our coconut macaroon – I called it coconut basboosa – you may want to give that a try as well. Basboosa is a dessert recipe in its own right, but the addition of desiccated coconut made it fascinating in a different way.

You would know you were successful in making this sweet stuff when, a little before the end of baking, you can smell its heavenly coconut-ty aroma. More than that, when, in between your fingers, you divide a piece into two, and you that kinda sticky inviting texture of the coconut macaroon, you definitely just got it right – the coconut macaroon recipe you have been looking for!

Description

Delish macaroons with coconut


Ingredients

Scale
  • 3 cups desiccated coconut
  • 1/2 cup all-purpose flour
  • 1 375 g can condensed milk
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla

Instructions

  1. In a deep bowl, combine all ingredients together and mix well.
  2. Scoop in muffin pans, preferably paper-lined, and bake at 350°F for 12 minutes.
